University at Buffalo Awarded National 2019 Best Food Allergy Training for Universities

AllerTrain recognizes outstanding university leader at the forefront of the foodservice industry in food allergy training

Campus Dining and Shops at the University at Buffalo (UB) is pleased to announce that it has been named 2019 Best Food Allergy Training for Universities by AllerTrain™. AllerTrain by MenuTrinfo is a national leader in the food allergy and gluten free training and awareness for the food service industry.

In March 2018, Campus Dining and Shops’ Registered Dietitian, Lori Bendersky MS, RD, CDN, became an AllerTrain Master Trainer. She went on to train the entire UB culinary and management team through the AllertrainU course--a food allergy and gluten-free certification program that covers essential information on how to safely prepare food for guests with food allergies, intolerances, sensitivities, and Celiac Disease in a university food service setting. “We are honored to be recognized for our training program and commitment to providing a safe dining experience for food allergy and gluten-free guests,” said Jeff Brady, executive director for Campus Dining and Shops.

“Providing a strong allergen program starts with training. We provide on-going allergen and gluten-free training to our culinary team, food service staff, student managers, and Resident Assistants,” said Bendersky. “Our training covers essential information on how to properly prepare allergen-free meals including best practices to prevent cross-contact as well as emergency procedures. We are thrilled for this award and proud to provide training that will ensure a safe dining experience for current and future UB students.”

This is the third year that AllerTrain by MenuTrinfo has recognized outstanding restaurant and university leaders at the forefront of the foodservice industry in food allergy training, programs, menus and safety.
